What are some of the big trends in wedding cakes at the moment?
I have seen progression over the last few months towards bigger and bigger cakes to make a statement at the wedding. We are making a lot of four-tier cakes and often very white to replicate Hannah and Beauden Barrett’s wedding cake that we did last year. Gold accents on cakes are also popular to incorporate.

Our banana and salted caramel cake seems to be the one that’s making a standout appearance at my wedding cake consultation, with a lot of people opting for this to make their cake a little bit different.

What are some of your wedding specialties?
We are simple at Bluebells – we will make a statement in an elegant way with our cakes. We’ve moved towards dessert tables – gorgeous little desserts like mini tarts, slices, mini cupcakes, macarons, mini tiramisu, lemon meringue tarts etc. This is something we can turn around with short notice and something that we think makes a point of difference at weddings.

What’s the craziest/most amazing wedding cake you’ve made recently?
One of my favourite ideas was a fake tier that was a cage between the bottom tier and top tier with floral inside the cage. Something different and a real work of art.

What are some of the big trends in wedding cakes at the moment?
We’re seeing lots of variety happening. It’s a real mix of people making cakes very personal or very traditional. We’re also seeing lots of people move away from the traditional idea of a cake to having cupcake and donut towers.

What are some of your wedding specialties?
We can do pretty much anything. From the classic fondant-covered white multi-tier cake to simple, rustic buttercream finishes and cupcake and donut towers.

What’s the craziest/most amazing wedding cake you’ve made recently?
The craziest one most recently is probably one of the cupcake, macaron and donut towers. It had over 150 iced donuts plus 150 cupcakes and 100 macarons, all delivered and set up on our acrylic stand. It was crazy not just in terms of getting everything made (donuts have to be made as late as possible to be super fresh) but also the sheer amount of them made stacking them quite tricky. Added to this, the venue had put out a small table expecting a standard cake and then had it positioned in an area in full sun. It all worked out in the end though.

If you ask me this question in a couple of months though the answer will be very different as we have a levitating cake coming up that requires a custom stand and frame to be made for it.

What are some of the big trends in wedding cakes at the moment?
Textured ganache, metallics and muted tones are still big trends this season.

What are some of your wedding specialties?
We love working with all mediums on cakes, with every cake being a custom order made to our clients specifications and needs.

What’s the craziest/most amazing wedding cake you’ve made recently?
We recently made a 14-tier cake for a customer that required assembly on site with a ladder!

What are some of the big trends in wedding cakes at the moment?
Big trends for wedding cake elements of 2020 are edible pearls/sprinkles, because these are an incredible way to incorporate pearls from a bride’s dress (on trend) to the cake and look incredibly elegant.

Brushstroke style, which is a stunning and effect design created from edible candy melts that look like brushstrokes and can be applied to the sides and on top of the cake. This is a modern and timeless style.

What are some of your wedding specialties?
One would be our signature online wedding cakes, where brides or grooms can simply order it online as a smooth, easy and cost-effective option. We have created these timeless designs to suit a wide range of weddings.

We also adore creating timeless, modern designs for weddings where we utilise different textures and fresh florals.

What’s the craziest/most amazing wedding cake you’ve made recently?
The most amazing cakes we have made this season would be the stunning three- or four-tier wedding cakes with a tier covered in pure gold leaf, which is applied by hand and can take up to an hour to carefully apply. The other tiers had smooth finishes, coconut thread and naked style textures, which all looked effective and had a stunning impact with the size and layering of textures.
