255g caster sugar
3 large eggs, beaten
1. Zest and juice lemons. Mix the juice, zest and sugar, and stir over a gentle heat in a double boiler or glass bowl on top of a pan of water.
2. Add the eggs and butter, and stir on a low heat until the mixture thickens and bubbles slightly.
3. Pour into sterilised jars and cool before sealing and refrigerating.
