Recipe: Mexican Wedding Cakes

    Are they biscuits? Are they cakes? Who cares when they taste this good. Stuck for a favour idea? Dunk them in icing sugar, wrap them in cellophane and present them to guests – you can't possibly go wrong. 

    1 cup butter, softened
    1 tsp vanilla
    1 cup icing sugar
    2 cups flour
    1 tsp salt
    ¾ cup finely chopped walnuts or pecans, toasted

    1 Preheat oven to 160°C, fanbake, or 170°C bake.

    2 Cream butter, sugar and vanilla until light in colour.

    3 Mix in flour, salt and chopped walnuts, taking care not to overmix or the dough will become dry.

    4 Roll into 2.5cm diameter balls and place on an ungreased baking sheet.

    5 Bake for 10-12 minutes until set, but not brown. Once cool, roll in icing sugar.
